Worthy of space on my shelf
"If you're thinking of getting a Cooks Illustrated title, this one would be a good place to start. I was given their Baking Book as a Christmas present and was disappointed to find the recipes were 80% a duplicate of what was contained in this volume, they just were printed in a larger font and with more description and sidebars. Their baking section is particular good with absolutely amazing results when I follow their recipe to the letter. Their Thin and Crisp Oatmeal cookies are a revelation. Their meats section also has some brilliant recipes and I've enjoyed many evenings of entertainment from this tome. Some of their recipes are a bit finicky and they do insist on more steps than I have patience for, but I know it is because in their test kitchen they tried it many ways and concluded on the one best way. I appreciated the detailed descriptions on everything related to cooking from the best way to season a cast iron frying pan to the best way to debone a chicken. The detailed illustrations are informative as well."
