"I soo badly wanted to do sourdough, but my hubby is gluten free. I had long since given up on making homemade gluten free bread, but I so badly wanted to try the sourdough trend when I found this book! I love that she uses good whole grains and not just starches. It makes it feel like it's worth the effort since I know it's truly healthier than what we can buy in store. . . it's also sooo much better tasting!! It can take a bit of effort to get your starter going, but don't give up! I've managed it twice and both times it took 3-5 attempts. . but once you have it!! I try andmake bagels and the dark sunflower bread once a week, I freeze most of it so it lasts, and it makes the rest of my week so much easier! The bagels are absolutely lovely. What you can do with the discard is fantastic to! Plus the author has an Instagram account @acoupleofceliacs where she shares more recipes, and she will respond to your questions! I cannot recommend it enough"
